Red Wine Risotto

Ingredients (for 4 people):

400 g of rice
50 g of butter
A piece of chopped onion
½ bottle of our Chianti Classico Albòre Riserva "Terre di Perseto"
½ liter of broth
4 tablespoons of Parmesan cheese
Salt and pepper


Peel and slice the onion finely. Put it in a saucepan with half the butter and brown it gently without letting it get too brown.

Add the rice and cook it over a moderate heat, then add the wine just a little at a time. Let it evaporate and then pour the boiling broth a little at a time.

Add salt and cook. When it is cooked, turn off the heat, add the remaining butter, the grated Parmesan cheese, the pepper and then serve immediately.
