DESCRIPTION OF OUR DOP CHIANTI CLASSICO EXTRA VIRGIN OLIVE OIL:

The D.O.P. quality certification of Protected Designation of Origin, that this extra virgin olive oil boasts, is applied exclusively to productions where the entire production cycle, from the raw material to the finished product, is carried out within a well defined geographical area and, therefore, cannot take place outside of it. The nature of the soil, the exposure and the climate of the Chianti Classico region guarantee the production of an unique extra virgin olive oil, with exceptional organoleptic characteristics. Thanks to a modern and new pressing system, the olives are vacuum squeezed in a dark room, thus obtaining an oil with extraordinary aromas and nutritional qualities. The pressing is carried out within 8 hours from the harvesting, in order to ensure the excellent quality of this EVO oil and in order to keep unaltered all its own scents.
Tasting notes: With a strong olive green color, this EVO oil has a rich and intense taste in the mouth, slightly spicy, with a light and elegant bitter note in the finish. It boasts scents of artichokes and fresh almonds.
Olives varieties: Maurino, Moraiolo, Leccino, Frantoio and Pendolino.
