Wild Boar With Sauce


Boned wild boar
Smells: celery, carrot, onion, parsley, basil, sage, rosemary, bay leaf
Red wine to fade
Tomato sauce


Wash the boar until the water is clear. Leave it half an hour in the water with a little vinegar.

Rinse it, drain it and put in a pan covered with all the crushed odors (except the bay leaf) and leave it overnight. Put on the fire, add the bay leaf and brown with a little oil. Add the red wine and add the tomato sauce to taste.
