Boned wild boar
Smells: celery, carrot, onion, parsley, basil, sage, rosemary, bay leaf
Red wine to fade
Wash the wild boar until the water is clear. Leave it half an hour in the water with a little of vinegar.
Rinse it, drain it and put in a pan covered with all the crushed smells (except the bay leaf) and leave it overnight.
The following day, put the pan on the fire, add the bay leaf and brown with a little oil. Add the red wine and the tomato sauce. Cook for at least 20 minutes or until the sauce is getting thick.
